Have you tried Einkorn Flour?

Einkorn is the oldest wheat known to scientists, and is considered man’s first wheat. The term einkorn is derived from the German language and interpreted to mean “single grain”. It is the most primitive form of wheat on earth. It is easier to digest and contains more protein and antioxidants than modern wheat. In nutrition sampling tests, Einkorn has been found to be a “more nutritious” grain. Einkorn contains higher levels of protein, essential fatty acids, phosphorous, potassium, pyridoxine (B6), lutein and beta-carotene (lutein). It also has plenty of carotenoids – the natural red, yellow or orange pigments that are found in many vegetables and fruits, and in a few grains. Carotenoids have the medical properties that help in preventing serious diseases such as cancer.

Einkorn wheat can be digested better than most foods. The low content of gluten in Einkorn makes it easier to digest than modern wheat. An improvement in digestion means that nutrients are better absorbed, ensuring that you have no tummy problems after consuming a delicious dish cooked with einkorn flour.


Jesuits Priests visit the Mill

In September, a group of 28 Jesuit priests from Georgetown University included a visit to the Mill in their tour of early Jesuit sites on the Eastern Shore. Mill President John Nizer and Miller James Casey demonstrated the milling process for them.


Winter Office Hours at the Mill

We thank you for your patronage throughout the past year and for shopping at our three special Christmas Shoppes. The good news is that even though the Mill is closed for the winter season, flours will still be available for purchase. Visit the Old Wye Mill office, located at 28637 Queen Anne Highway (corner of Old Wye Mills Road and Route 404) from 10 am to 2 pm on Wednesdays beginning January 11th. Call 410-827-3850


Photo of the Month

In the 1930s, the current Wye Mill Office was a gas station and bus stop. The current Old Wye Mills Road was then the major route between Queenstown and Easton. It was also the connecting point for roads to Centreville and Denton. This was before Route 50 was extended to the Eastern Shore to connect the Bay Bridge (which opened in 1952) with Ocean City.
